🧂 Ingredients

  • 400 g Beef sirloin or flank steak(thinly sliced against the grain)
  • 300 g Garlic scapes(trimmed and cut into 1.5-inch pieces)
  • 2 tbsp Ginger(minced)
  • 3 cloves Garlic(minced)
  • 1 tbsp Shaoxing wine(or dry sherry)
  • 3 tbsp Light soy sauce
  • 1 tbsp Oyster sauce
  • 2 tbsp Cornstarch
  • 1 tsp Sesame oil
  • 2 tbsp Vegetable oil(divided)
  • 1 tsp Sugar
  • 1/4 tsp Black pepper

    In a bowl, combine the thinly sliced beef with 1 tbsp light soy sauce, Shaoxing wine, 1 tbsp cornstarch, minced garlic, minced ginger, sesame oil, and black pepper. Mix well and let marinate for at least 20 minutes.

    Prepare the garlic scapes by trimming off the tough ends and cutting them into 1.5-inch pieces.

    In a separate small bowl, whisk together the remaining 2 tbsp light soy sauce, oyster sauce, remaining 1 tbsp cornstarch, and 1/4 cup beef stock (or water). Set aside.

    Heat 1 tbsp of vegetable oil in a wok or large skillet over high heat. Add the marinated beef and stir-fry quickly until browned but still slightly pink inside, about 2-3 minutes. Remove the beef from the wok and set aside.

    Add the remaining 1 tbsp of vegetable oil to the wok. Add the prepared garlic scapes and stir-fry for about 2-3 minutes until they are tender-crisp.
