  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2 tbsp Olive oil(for cooking)

👨‍🍳 Instructions

  1. 1

In a large bowl, combine ground lamb, chopped onion, minced garlic, parsley, mint, cumin, coriander, cinnamon, cayenne pepper (if using), salt, and black pepper.

  2. 2

Mix gently with your hands until all ingredients are well combined, being careful not to overmix.

  3. 3

Divide the mixture into 8 equal portions and shape each portion into a long, cylindrical kebab (kofta) around skewers.

  4. 4

Preheat grill to medium-high heat. Brush grill grates with olive oil.

  5. 5

Grill the kofta for 6-8 minutes per side, or until cooked through and nicely charred.

  6. 6

Remove from grill and let rest for a few minutes before serving.

💡 Pro Tips

  • For extra flavor, you can add a pinch of allspice to the lamb mixture.
  • If not using skewers, you can form the kofta into patties.
  • Serve with tahini sauce, chopped tomatoes, onions, and warm pita bread.

🔄 Variations

  • Use a mix of lamb and beef for a different flavor profile.
  • Add finely grated zucchini to the mixture for added moisture.
