Kansiyé (Guinean Beef Stew)
Kansiyé is a rich and flavorful Guinean stew made with tender chunks of beef, simmered in a savory sauce of peanut butter, tomato, and aromatic spices. It's traditionally served over fluffy white rice, making for a hearty and satisfying meal.

- 1 lb Beef chuck(cut into 1-inch cubes)
- 3 tbsp Vegetable oil
- 1 medium Large onion(chopped)
- 3 cloves Garlic cloves(minced)
- 1 tbsp Fresh parsley(finely chopped)
- 0.25 tsp Dried thyme
- 0.125 tsp Ground cloves
- 0.5 tsp Salt
- 0.125 tsp Black pepper
- 8 oz Tomato sauce(or diced tomatoes)
- 2 cups Water
- 3 tbsp Creamy peanut butter
- Cooked white rice(for serving)

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add the beef cubes and brown them on all sides. Remove beef and set aside.

Add the chopped onion to the pot and sauté until softened and translucent.

Stir in the minced garlic, chopped parsley, thyme, cloves, salt, and pepper. Cook for 1 minute until fragrant.

Add the tomato sauce (or diced tomatoes) to the pot and stir well, scraping up any browned bits from the bottom.
