🧂 Ingredients

  • 2 cups Ripe Pandanus fruit(pulp, mashed)
  • 1 cup All-purpose flour
  • 0.5 cup Shredded coconut
  • 0.25 cup Sugar(or to taste)
  • 1 tsp Baking powder
  • 0.25 tsp Salt
  • 1 large Egg
  • 0.25 cup Milk(or coconut milk)
  • for frying Vegetable oil

👨‍🍳 Instructions

  1. 1

In a large bowl, combine the mashed pandanus fruit pulp, shredded coconut, sugar, flour, baking powder, and salt. Mix until just combined.

  2. 2

In a separate small bowl, whisk the egg and milk (or coconut milk) together. Pour this wet mixture into the dry ingredients and stir until a thick batter forms. Do not overmix.

  3. 3

Heat about 1-2 inches of vegetable oil in a deep pan or pot over medium heat until it reaches about 350°F (175°C).

  4. 4

Carefully drop spoonfuls of the batter into the hot oil. Do not overcrowd the pan.

  5. 5

Fry for 3-4 minutes per side, or until golden brown and cooked through. Use a slotted spoon to turn the fritters.

  6. 6

Remove the fritters from the oil and place them on a wire rack lined with paper towels to drain excess oil.

  7. 7

Serve warm, dusted with a little extra sugar if desired.

💡 Pro Tips

  • Ensure the pandanus fruit is ripe for the best flavor and texture.
  • The batter should be thick enough to hold its shape when dropped into the oil.
  • Maintain a consistent oil temperature to ensure even cooking and prevent burning.

🔄 Variations

  • Add a pinch of cinnamon or nutmeg to the batter for extra spice.
  • Serve with a drizzle of honey or a dollop of whipped cream.
  • For a crispier fritter, use a slightly thinner batter.
