🧂 Ingredients

  • 1.5 kg Goat meat(cut into large pieces)
  • 6 cloves Garlic(minced)
  • 1/4 cup Lemon juice
  • 1/4 cup Olive oil
  • 1/2 cup White wine(optional, for basting)
  • 1-2 small Hot peppers(finely chopped (optional, for marinade))
  • 2 Bay leaves
  • to taste Salt
  • to taste Black pepper

👨‍🍳 Instructions

  1. 1

In a large bowl, combine the goat meat pieces with minced garlic, lemon juice, olive oil, chopped hot peppers (if using), salt, and black pepper. Mix well to ensure the meat is evenly coated.

  2. 2

Cover the bowl and marinate in the refrigerator for at least 4 hours, or preferably overnight.

  3. 3

Preheat your oven to 180°C (350°F).

  4. 4

Place the marinated goat meat in a roasting pan. Add the bay leaves.

  5. 5

Pour the white wine (if using) over the meat. Cover the roasting pan tightly with aluminum foil.

  6. 6

Roast in the preheated oven for about 1.5 to 2 hours, or until the goat meat is very tender. Baste occasionally with the pan juices (and white wine, if used).

  7. 7

Remove the foil for the last 15-20 minutes of cooking to allow the meat to brown slightly.

  8. 8

Serve hot, typically with rice, fried potatoes (chips), or a side of funge.

💡 Pro Tips

  • Marinating overnight yields the best flavor and tenderness.
  • Adjust the amount of chili pepper to your spice preference.
  • If you don't have white wine, you can use a little water or broth for basting.

🔄 Variations

  • Add root vegetables like carrots or potatoes to the roasting pan for a complete meal.
  • A pinch of cumin or coriander can be added to the marinade for extra flavor.
