  • 400 g Crab meat(fresh or good quality canned, picked over for shells)
  • 100 g Breadcrumbs(panko or fresh breadcrumbs)
  • 1 large Egg(beaten)
  • 2 tbsp Mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp Lemon juice
  • 2 tbsp Fresh parsley(chopped)
  • 1 tbsp Chives(chopped)
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper(freshly ground)
  • 2 tbsp Butter or oil(for frying)

    In a medium bowl, gently combine the crab meat, breadcrumbs, beaten egg, mayonnaise, Dijon mustard, lemon juice, chopped parsley, chives, salt, and pepper. Be careful not to overmix, as this can make the cakes tough.

    Form the mixture into 4-6 patties, about 1.5 cm thick. If the mixture is too wet, add a little more breadcrumbs.

    Heat the butter or oil in a large skillet over medium heat.
