Lasopy (Madagascan Vegetable Soup)
A hearty and comforting vegetable soup, Lasopy is a staple in Madagascar, often made with a rich meat bone broth and pureed to a smooth consistency. It's a perfect starter or a light meal.

- 500 g Beef or veal bones(for broth)
- 2 medium Turnips(peeled and diced)
- 200 g Green beans(trimmed and cut)
- 3 medium Tomatoes(chopped)
- 2 medium Carrots(peeled and diced)
- 2 medium Potatoes(peeled and diced)
- 1 large Leeks(white and light green parts, sliced)
- 1 large Onion(chopped)
- 3 cloves Garlic(minced)
- 2 tbsp Vegetable oil
- 8 cups Water(or as needed)
- Salt(to taste)
- Black pepper(freshly ground, to taste)
- Fresh parsley(chopped, for garnish)

In a large pot, combine the beef or veal bones with 8 cups of water. Bring to a boil, then reduce heat and simmer for 1 hour to create a rich broth. Skim off any impurities that rise to the surface. Strain the broth and discard the bones.

In the same pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Add the diced turnips, green beans, chopped tomatoes, diced carrots, diced potatoes, and sliced leeks to the pot. Stir to combine.

Pour the strained broth over the vegetables. Bring to a boil, then reduce heat, cover, and simmer for 30-40 minutes, or until all the vegetables are very tender.

Carefully transfer the soup to a blender (in batches if necessary) or use an immersion blender to puree the soup until smooth and creamy. Be cautious when blending hot liquids.
