Henan-Akoho sy Voan-Tsindrana (Chicken with Ginger)
A fragrant and comforting Malagasy chicken dish where the natural sweetness of chicken is enhanced by the warmth and spice of fresh ginger.

🧂 Ingredients
- 1 kg Chicken pieces(bone-in, cut into serving pieces (e.g., thighs, drumsticks))
- 2 tbsp Vegetable oil
- 1 large Onion(thinly sliced)
- 4 cloves Garlic(minced)
- 2 inch piece Fresh ginger(grated or finely julienned)
- 1 tsp Turmeric powder
- 1.5 cups Water or chicken broth
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground)
- 2 stalks Green onions(chopped, for garnish)
👨🍳 Instructions
- 1
Pat the chicken pieces dry with paper towels. Season with salt and pepper.
💡 Tip: Drying the chicken helps it brown better. - 2
Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the chicken pieces on all sides until golden. Remove chicken and set aside.
- 3
Add the sliced onion to the pot and sauté until softened and lightly browned, about 6-8 minutes.
- 4
Add the minced garlic and grated ginger. Cook for 1-2 minutes until fragrant, stirring constantly.
- 5
Stir in the turmeric powder and cook for another 30 seconds.
- 6
Return the chicken pieces to the pot. Pour in the water or chicken broth.
💡 Tip: Ensure liquid comes about halfway up the chicken pieces. - 7
Bring the liquid to a simmer, then reduce heat to low, cover, and cook for 30-35 minutes, or until the chicken is cooked through and tender.
💡 Tip: The sauce should thicken slightly. - 8
Taste and adjust seasoning with salt and pepper if needed. Garnish with chopped green onions before serving with rice.
💡 Pro Tips
- ✓Use a good quality chicken for the best flavor.
- ✓Don't overcrowd the pot when browning the chicken, cook in batches if necessary.
- ✓Adjust the amount of ginger to your preference; it can be quite potent.
🔄 Variations
- Add a few slices of chili pepper for a bit of heat.
