Latvian Poppy Seed and Cheese Strudel

- 250 g Cottage cheese(full fat)
- 1 tsp Lemon zest
- 1 tsp Vanilla extract
- 1 tbsp Milk(for egg wash)

In a small bowl, combine warm milk, yeast, and 1 tablespoon of sugar. Let stand for 5-10 minutes until foamy.

In a large bowl, combine flour, remaining sugar, and salt. Add the softened butter, egg, and the yeast mixture. Mix until a soft dough forms. Knead for about 5-7 minutes until smooth and elastic. Cover and let rise in a warm place for 1 hour, or until doubled in size.

While the dough rises, prepare the filling. In a bowl, combine ground poppy seeds, cottage cheese, remaining sugar, lemon zest, and vanilla extract. Mix well.

Punch down the risen dough and roll it out on a lightly floured surface into a large rectangle, about 30x40 cm (12x16 inches).
