- 1 cup Sorghum grain
- 1 cup Pumpkin(peeled and cubed)
- 1 large Onion(chopped)
- 3 cloves Garlic(minced)
- 1 bunch Leafy greens (e.g., spinach, kale, or Swiss chard)(chopped)
- 1 tablespoon Vegetable oil
- 1 teaspoon Paprika
- 1/2 teaspoon Turmeric

- 6-8 cups Water or vegetable broth

Drain and rinse the soaked beans. In a large pot, combine the beans and sorghum grain with 6 cups of water or broth. Bring to a boil, then reduce heat and simmer for about 1 hour, or until the beans and sorghum are partially tender.

Add the cubed pumpkin, chopped onion, and minced garlic to the pot. Continue to simmer for another 20 minutes, or until the pumpkin is tender.

Stir in the chopped leafy greens, paprika, turmeric, salt, and pepper. Cook for another 10-15 minutes, or until the greens are wilted and tender. Add more water or broth if the stew becomes too thick.
