Mofo Gasy
Madagascar Yeasted Pancakes
Mofo Gasy are small, fluffy, slightly sweet yeasted pancakes that are a popular breakfast and street food in Madagascar. They are traditionally cooked in a special pan that gives them a spherical shape, but can also be made in a regular skillet or an aebleskiver pan. The batter is made from rice flour, often combined with wheat flour or cream of rice, and leavened with yeast, giving them a unique texture.

๐ง Ingredients
- 1 cup Rice(Basmati or other long-grain rice)
- 1 cup Water(for soaking rice)
- 1 cup Full-fat coconut milk
- 1/4 cup Unsweetened coconut flakes
- 1/4 cup Granulated sugar(plus more for serving)
- 1 tsp Active dry yeast
- 1/4 tsp Kosher salt
- 1/2 tsp Ground cardamom
- 2-3 tbsp Coconut oil(for cooking)
- Honey(for serving (optional))
๐จโ๐ณ Instructions
- 1
Rinse the rice thoroughly under cold water until the water runs clear. Place the rinsed rice in a bowl, cover with cold water, and soak for at least 4 hours or overnight.
- 2
Drain the soaked rice and transfer it to a blender. Add the coconut milk, coconut flakes, sugar, yeast, salt, and cardamom. Puree until very smooth.
- 3
Pour the batter into a large bowl, cover with a clean towel, and let it rest in a warm spot for 1-2 hours, or until it becomes bubbly and has thickened.
- 4
Heat about 1-2 tablespoons of coconut oil in a large non-stick skillet or an aebleskiver pan over medium heat. Swirl to coat the bottom.
- 5
Drop spoonfuls of batter into the hot pan to form small pancakes (about 2 inches in diameter). Cook for 1-2 minutes until bubbles form on the surface, then carefully flip and cook for another minute on the other side until golden brown.
- 6
Remove the pancakes from the pan and repeat with the remaining batter, adding more oil as needed. Serve warm, drizzled with honey or extra sugar if desired.
๐ก Pro Tips
- โEnsure your yeast is active for proper batter fermentation.
- โIf you don't have an aebleskiver pan, a regular non-stick skillet works well. You can also use a mold or cookie cutters to achieve a round shape.
- โThe batter consistency can vary; adjust with a little more liquid if too thick, or a bit more rice flour if too thin.
