  • 1.5 pounds Beef or Lamb(cut into cubes)
  • 2 tablespoons Vegetable oil
  • 1 large Onion(finely chopped)
  • 3.5 cloves Garlic(minced)
  • 1 tablespoon Tomato paste
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 2 medium Tomatoes(chopped)
  • 2 medium Carrots(peeled and sliced)
  • 2 medium Potatoes(peeled and cubed)
  • 1 medium Sweet potato(peeled and cubed)
  • 1 medium Bell pepper(seeded and chopped)
  • 1 Scotch Bonnet pepper(optional, for heat)
  • 1 cup Peanut butter(natural, unsweetened)
  • 2 cups Vegetable or Meat Broth
  • Salt(to taste)
  • Black pepper(to taste)
  • Fresh cilantro or parsley(chopped, for garnish)
  • Cooked rice or couscous(for serving)

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant.
