👨🍳 Instructions
- 1
In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant.
- 2
Add the cubed meat to the pot and cook until browned on all sides. Stir in the tomato paste, cumin, coriander, salt, and pepper, coating the meat.
- 3
Add the chopped tomatoes, carrots, potatoes, sweet potato, bell pepper, and scotch bonnet pepper (if using) to the pot. Mix well.
- 4
Pour in the broth, ensuring the ingredients are submerged. Bring to a boil, then reduce heat to low, cover, and simmer until the meat is tender.
- 5
In a separate bowl, whisk the peanut butter with a ladleful of hot broth from the stew until smooth. Stir the peanut butter mixture into the pot.
- 6
Continue simmering for another 15-20 minutes, allowing the sauce to thicken and flavors to meld. Adjust seasoning if necessary.
- 7
Serve hot, garnished with fresh cilantro or parsley, alongside cooked rice or couscous.
