  • 1 kg Yams or Sweet Potatoes(peeled and cut into chunks)
  • 1 medium Onion(chopped)
  • 3 cloves Garlic(minced)
  • 400 g Tomatoes(crushed or pureed)
  • 3 tbsp Vegetable Oil
  • 300 g Beef or Fish(cubed (optional))
  • 1 cup Water
  • to taste Salt
  • to taste Black Pepper
  • 1 small Chili Pepper(finely chopped (optional))

    Boil the yam or sweet potato chunks in salted water until very tender, about 20-25 minutes. Drain well.

    While the yams are boiling, heat the vegetable oil in a separate pot over medium heat. Sauté the chopped onion until softened, about 5 minutes.

    Add the minced garlic and cook for another minute until fragrant. If using beef or fish, add it now and brown it on all sides.

    Stir in the crushed tomatoes and cook for 10-15 minutes, stirring occasionally, until the sauce thickens.
