🧂 Ingredients
- 1 kg Yams or Sweet Potatoes(peeled and cut into chunks)
- 1 medium Onion(chopped)
- 3 cloves Garlic(minced)
- 400 g Tomatoes(crushed or pureed)
- 3 tbsp Vegetable Oil
- 300 g Beef or Fish(cubed (optional))
- 1 cup Water
- to taste Salt
- to taste Black Pepper
- 1 small Chili Pepper(finely chopped (optional))
👨🍳 Instructions
- 1
Boil the yam or sweet potato chunks in salted water until very tender, about 20-25 minutes. Drain well.
- 2
While the yams are boiling, heat the vegetable oil in a separate pot over medium heat. Sauté the chopped onion until softened, about 5 minutes.
- 3
Add the minced garlic and cook for another minute until fragrant. If using beef or fish, add it now and brown it on all sides.
- 4
Stir in the crushed tomatoes and cook for 10-15 minutes, stirring occasionally, until the sauce thickens.
- 5
Add the water, salt, pepper, and chili pepper (if using). Bring to a simmer and cook for another 10 minutes.
- 6
Mash the boiled yams or sweet potatoes until smooth. You can use a masher or a fork. For a smoother consistency, you can add a little of the reserved yam cooking water or a splash of milk.
- 7
Serve the mashed yams (Mou Mou) hot, topped with the savory sauce.
