A simple yet flavorful side dish or light meal, this stew combines tender okra with ripe tomatoes, onions, and basic seasonings. It's often served with nsima, Malawi's staple maize porridge.

- 4 cups Okra(sliced (fresh or frozen))
- 1 can (15 oz) Diced tomatoes(undrained)
- 1 small Onion(chopped)
- 3 cloves Garlic(minced)
- 1/2 cup Water or Vegetable Broth
- 2 tbsp Olive oil
- to taste Salt
- to taste Black pepper
- 1 tsp Paprika
- 1 tbsp Lemon juice(freshly squeezed, optional)

Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until softened, about 4-5 minutes.
