  • to taste Black pepper
  • 1 tsp Paprika
  • 1 tbsp Lemon juice(freshly squeezed, optional)

  1. 1

Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until softened, about 4-5 minutes.

Add the sliced okra, paprika, salt, and pepper to the skillet. Cook for 7-8 minutes, stirring occasionally, until the okra is slightly tender.

  4. 4

Pour in the undrained diced tomatoes and the water (or broth). Stir to combine.

  5. 5

Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes, stirring occasionally, until the okra is tender and the sauce has thickened slightly.

  6. 6

If using, stir in the fresh lemon juice just before serving.

  7. 7

Taste and adjust seasoning if necessary. Serve hot as a side dish or over nsima.
