Omani Date and Nut Muffins - Oman traditional dish

🧂 Ingredients

  • 2 cups All-purpose flour
  • 2 tsp Baking powder
  • 1 tsp Ground cardamom
  • 1/2 tsp Salt
  • 1 cup Omani dates(pitted and chopped)
  • 1/2 cup Mixed nuts(chopped (almonds, walnuts, pistachios))
  • 1/2 cup Butter(melted)
  • 3/4 cup Brown sugar
  • 2 large Eggs
  • 1/2 cup Milk
  • 1 tsp Vanilla extract

👨‍🍳 Instructions

  1. 1

Preheat oven to 190°C (375°F). Line a 12-cup muffin tin with paper liners or grease well.

  2. 2

In a large bowl, whisk together flour, baking powder, ground cardamom, and salt.

  3. 3

In a separate medium bowl, combine chopped dates and chopped nuts.

  4. 4

In another bowl, whisk together melted butter, brown sugar, eggs, milk, and vanilla extract until well combined.

  5. 5

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

  6. 6

Gently fold in the date and nut mixture.

  7. 7

Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

  8. 8

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  9. 9

Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

💡 Pro Tips

  • For softer dates, soak them in warm water for 10 minutes before chopping.
  • Ensure not to overmix the batter, as this can lead to tough muffins.
  • You can add a sprinkle of coarse sugar on top before baking for a crunchy crust.

🔄 Variations

  • Add a tablespoon of orange blossom water for an extra floral note.
  • Substitute some of the nuts with seeds like pumpkin or sunflower seeds.
  • Add a pinch of cinnamon or nutmeg for a warmer spice profile.
