🧂 Ingredients

  • 2 medium Breadfruit(peeled, cored, and boiled until tender)
  • 1/4 cup Coconut milk
  • 1/2 cup All-purpose flour
  • 2 tbsp Sugar
  • 1/2 tsp Salt
  • 1 tsp Baking powder
  • for frying Vegetable oil

👨‍🍳 Instructions

  1. 1

Boil the peeled and cored breadfruit until fork-tender. Drain well and mash thoroughly in a large bowl.

  2. 2

Add coconut milk, flour, sugar, salt, and baking powder to the mashed breadfruit. Mix until just combined to form a thick batter. Do not overmix.

💡 Tip: The batter should be thick enough to hold its shape.
  3. 3

Heat about 2 inches of vegetable oil in a deep pan or pot over medium-high heat until it reaches approximately 350°F (175°C).

  4. 4

Carefully drop spoonfuls of the batter into the hot oil. Do not overcrowd the pan.

💡 Tip: Use two spoons to shape the fritters.
  5. 5

Fry for 3-5 minutes per side, or until golden brown and cooked through. Use a slotted spoon to remove the fritters from the oil.

  6. 6

Drain the fritters on paper towels. Serve warm.

💡 Tip: Serve with a drizzle of honey or a side of sweet chili sauce.

💡 Pro Tips

  • Ensure the breadfruit is thoroughly drained to prevent soggy fritters.
  • Maintain a consistent oil temperature for even cooking.
  • Adjust sugar content based on personal preference.

🔄 Variations

  • Add shredded coconut to the batter for extra flavor and texture.
  • Incorporate finely chopped chives or green onions for a savory twist.
