Yam and Greens in Coconut Milk

- 4 cups Mixed greens(such as spinach, taro leaves (rourou), or aibika, roughly chopped)
- 1 can (400ml) Coconut milk
- 1 medium Onion(finely chopped)
- 2 cloves Garlic(minced)
- 1 tsp Ginger(grated)
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground)
- 1 tbsp Cooking oil

Place the cubed yam in a pot and cover with water. Bring to a boil and cook for about 10-15 minutes, or until the yam is fork-tender but not mushy. Drain and set aside.

In the same pot (or a clean one), heat the cooking oil over medium heat. Add the chopped onion and sautรฉ until softened, about 5 minutes.

Add the minced garlic and grated ginger, and cook for 1 minute until fragrant.

Add the mixed greens to the pot and stir until they begin to wilt.

Pour in the coconut milk, add the cooked yam, salt, and pepper. Stir gently to combine.

Bring the mixture to a gentle simmer, then reduce the heat to low, cover, and cook for another 10-15 minutes, allowing the flavors to meld and the greens to become fully tender.
