Piletina sa Pečurkama i Pavlaka Sosom (Chicken with Mushrooms and Sour Cream Sauce) - Serbia traditional dish

🧂 Ingredients

  • 600 g Boneless, skinless chicken breasts(cut into 1-inch cubes)
  • 2 tbsp Olive oil
  • 1 medium Onion(finely chopped)
  • 3 cloves Garlic(minced)
  • 400 g Fresh mushrooms(sliced)
  • 200 ml Chicken broth
  • 200 g Sour cream
  • 1 tbsp All-purpose flour
  • 1 tsp Salt(or to taste)
  • 0.5 tsp Black pepper(freshly ground, or to taste)
  • 2 tbsp Fresh parsley(chopped, for garnish)

👨‍🍳 Instructions

  1. 1

Season the chicken cubes with salt and pepper.

  2. 2

Heat olive oil in a large skillet or pot over medium-high heat. Add the chicken and cook until browned on all sides. Remove chicken from the skillet and set aside.

  3. 3

Add the chopped onion to the same skillet and sauté until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

  4. 4

Add the sliced mushrooms to the skillet and cook until they release their liquid and start to brown, about 5-7 minutes.

  5. 5

In a small bowl, whisk together the flour and chicken broth until smooth. Pour this mixture into the skillet with the mushrooms and onions. Bring to a simmer, stirring constantly, until the sauce thickens.

  6. 6

Stir in the sour cream and return the browned chicken to the skillet. Cook for another 5-10 minutes, stirring occasionally, until the chicken is cooked through and the sauce is heated through. Do not boil after adding sour cream.

  7. 7

Season with additional salt and pepper to taste. Garnish with fresh chopped parsley before serving.

💡 Pro Tips

  • For a richer flavor, you can use chicken thighs instead of breasts.
  • If the sauce is too thick, add a little more chicken broth or water.
  • If the sauce is too thin, you can create a slurry with 1 tablespoon of flour and 2 tablespoons of cold water, then stir it into the simmering sauce until thickened.

🔄 Variations

  • Add a splash of white wine to the mushroom mixture before adding the broth for extra depth of flavor.
  • Include other vegetables like diced bell peppers or carrots along with the onions.
