Pionono de Camarones
Piononos de Camarones are a delightful Puerto Rican appetizer featuring sweet plantain cups filled with a savory shrimp and sofrito mixture, topped with cheese and baked until golden.

- 4 large Ripe plantains(peeled and sliced lengthwise into 1/4-inch thick strips)
- 1 cup Vegetable oil(for frying)
- 1 lb Shrimp(peeled, deveined, and finely chopped)
- 3 tbsp Sofrito
- 1/4 cup Tomato sauce
- 1 tsp Adobo seasoning
- 1 packet Sazón con culantro y achiote
- 2 tbsp Chopped fresh cilantro
- 1/2 cup Shredded cheese(Monterey Jack or a blend)

Fry the plantain strips in hot oil until golden brown and slightly softened. Drain on paper towels.
