  • 4 large Ripe plantains(peeled and sliced lengthwise into 1/4-inch thick strips)
  • 1 cup Vegetable oil(for frying)
  • 1 lb Shrimp(peeled, deveined, and finely chopped)
  • 3 tbsp Sofrito
  • 1/4 cup Tomato sauce
  • 1 tsp Adobo seasoning
  • 1 packet Sazón con culantro y achiote
  • 2 tbsp Chopped fresh cilantro
  • 1/2 cup Shredded cheese(Monterey Jack or a blend)

  • to taste Black pepper

    Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.
