Pirão de Batata Doce com Peixe

- 1 kg Sweet potatoes(peeled and cut into chunks)
- 600 g White fish fillets(such as tilapia or cod, cut into portions)
- 1 large Onion(finely chopped)
- 4 Garlic cloves(minced)
- 3 tbsp Palm oil
- 0.5 cup Cassava flour(for the pirão)
- 2 cups Water(for the pirão)
- 2 tbsp Lemon juice
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground)
- 2 tbsp Parsley(chopped, for garnish)

Place the sweet potato chunks in a pot, cover with water, and bring to a boil. Cook until very tender, about 20-25 minutes. Drain most of the water, leaving just a little at the bottom of the pot.

Mash the sweet potatoes until smooth. Gradually whisk in the cassava flour and 2 cups of water until a thick, smooth porridge (pirão) forms. Cook over low heat, stirring constantly, for about 5-7 minutes until it thickens to your desired consistency.

While the pirão is cooking, season the fish fillets with salt and pepper. In a separate pan, heat 2 tbsp of palm oil over medium-high heat. Pan-fry the fish until golden brown and cooked through, about 3-4 minutes per side. Set aside.

In the same pan, add the remaining 1 tbsp of palm oil. Add the chopped onion and sauté until softened, about 5 minutes. Add the minced garlic and cook for another minute.

Stir in the lemon juice, salt, and pepper. Cook for 1-2 minutes to meld the flavors. This forms a light sauce to accompany the fish.

Serve the pirão de batata doce hot, topped with the pan-fried fish and drizzled with the onion-lemon sauce. Garnish with fresh chopped parsley.
