  • 1 kg Chicken(cut into pieces (thighs and drumsticks recommended))
  • 3 medium Ripe Plantains(peeled and sliced into 1-inch rounds)
  • 1 large Onions(chopped)
  • 3 medium Tomatoes(chopped)
  • 3 cloves Garlic(minced)
  • 1 tsp Ginger(grated)
  • 4 tbsp Vegetable Oil
  • 300 ml Chicken Broth or Water
  • 0.5 tsp Thyme(dried)
  • 0.5 tsp Curry Powder
  • Salt(to taste)
  • Black Pepper(to taste)
  • 1 Optional: Bay Leaf

    Season chicken pieces with salt and pepper. In a large pan or pot, heat 2 tbsp of vegetable oil over medium-high heat. Brown chicken pieces on all sides. Remove chicken and set aside.

    Add the remaining 2 tbsp of vegetable oil to the same pan. Add chopped onions and sauté until softened, about 5 minutes.

    Stir in minced garlic and grated ginger, cooking for 1 minute until fragrant.

    Add chopped tomatoes and cook for about 8-10 minutes, stirring occasionally, until they break down into a sauce.
