Riha Folhi (Curried Tuna Rolls)
Riha Folhi are delicate crepes filled with a savory mixture of spiced tuna and onions, then rolled and often served as a popular snack or appetizer.

🧂 Ingredients
- 2 cups All-purpose flour
- 2.5 cups Water
- 0.25 tsp Turmeric powder
- 1.5 tsp Salt(or to taste)
- 2 cups Maldivian smoked tuna (Valhoamas)(chopped (canned tuna, drained and lightly pan-fried, can be substituted))
- 2 medium Onions(finely chopped)
- 2 tsp Hanaakuri Havaadhu (Maldivian roasted curry powder)
- 0.5 tsp Chili powder
- 0.25 tsp Cinnamon powder
- 0.25 tsp Cardamom powder
- 1 tbsp Lemon juice
- 2 pieces Rampe leaves (pandan leaves)
- 0.5 cup Coconut milk (thick)
- 1 tsp Sugar

Prepare the batter: In a bowl, mix flour, turmeric powder, and salt. Gradually add water while whisking to form a thick batter with no lumps.

Prepare the filling: In a separate pan, heat a little oil (optional) and sauté the finely chopped onions until softened. Add the chopped Maldivian smoked tuna, Hanaakuri Havaadhu, chili powder, cinnamon powder, cardamom powder, lemon juice, and rampe leaves. Stir well and cook for about 3-5 minutes. Add the thick coconut milk and sugar, stir, and simmer for another 3 minutes until the mixture is well combined and slightly thickened. Remove the rampe leaves.

Cook the crepes: Heat a lightly oiled non-stick pan over medium heat. Pour a large tablespoon of batter onto the pan and spread it to form a thin crepe. Cook for about 1-2 minutes until the edges start to lift. Do not flip; remove the crepe from the pan and place it on a plate.
