🧂 Ingredients

  • 1 kg Goat meat(cut into 2-inch cubes)
  • 4 medium Green plantains(peeled and cut into 2-inch pieces)
  • 2 large Onions(chopped)
  • 4 cloves Garlic(minced)
  • 3 medium Tomatoes(chopped)
  • 1 tablespoon Ginger(grated)
  • 1 teaspoon Coriander powder
  • 1 teaspoon Cumin powder
  • 1/2 teaspoon Turmeric powder
  • 1/2 teaspoon Chili powder(or to taste)
  • 3 tablespoons Vegetable oil
  • 4 cups Water or broth
  • to taste Salt
  • to taste Black pepper

👨‍🍳 Instructions

  1. 1

Season the goat meat with salt and black pepper.

  2. 2

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the goat meat on all sides, working in batches if necessary. Remove the meat and set aside.

  3. 3

Add the chopped onions to the pot and sauté until softened, about 5-7 minutes.

  4. 4

Add the minced garlic and grated ginger, and cook for another minute until fragrant.

  5. 5

Stir in the chopped tomatoes, coriander powder, cumin powder, turmeric powder, and chili powder. Cook for 5 minutes, stirring occasionally, until the tomatoes have broken down and the spices are fragrant.

  6. 6

Return the browned goat meat to the pot. Add the water or broth, ensuring the meat is mostly submerged. Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour, or until the meat is tender.

  7. 7

Add the green plantain pieces to the pot. Stir to combine, cover, and continue to simmer for another 25-30 minutes, or until the plantains are tender and cooked through.

  8. 8

Taste and adjust seasoning with salt and pepper as needed. Serve hot.

💡 Pro Tips

  • For a richer flavor, you can marinate the goat meat for at least 30 minutes (or overnight) with some of the spices before browning.
  • If you prefer a thicker stew, you can mash some of the plantain pieces against the side of the pot towards the end of cooking.
  • Adjust the chili powder to your preferred level of spiciness.

🔄 Variations

  • You can substitute beef or lamb for goat meat.
  • Add other vegetables like carrots or bell peppers along with the plantains.
