🧂 Ingredients

  • 1 lb Goat, beef, or chicken meat(cut into 1-inch cubes)
  • 1 medium Onion(quartered)
  • 4 medium Fresh ripe plum tomatoes(blended)
  • 0.5 medium Onion(minced)
  • 2 cloves Garlic(minced)
  • 3 Pili-pili chilies(or other hot chilies, to taste)
  • 2 tablespoons Vegetable oil
  • 1 tablespoon Tomato paste
  • 1 Bouillon cube(Maggi or similar)
  • Salt(to taste)
  • 1 teaspoon Cumin(optional)
  • 1 teaspoon Paprika(optional)

👨‍🍳 Instructions

  1. 1

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

💡 Tip: Metal skewers do not require soaking.
  2. 2

Prepare the marinade: In a blender, combine the blended tomatoes, minced onion, minced garlic, chilies, vegetable oil, tomato paste, and bouillon cube. Blend until smooth. Season with salt, cumin, and paprika if using.

💡 Tip: Adjust chili amount based on desired heat level.
  3. 3

Thread the meat cubes and onion quarters onto the skewers, alternating between meat and onion.

  4. 4

Pour about half of the marinade over the skewers, ensuring they are well coated. Let marinate for at least 30 minutes at room temperature, or longer in the refrigerator.

  5. 5

Preheat your grill to medium-high heat.

💡 Tip: Alternatively, you can bake the brochettes in a preheated oven at 425°F (220°C) for about 10-15 minutes.
  6. 6

Grill the brochettes for 8-10 minutes, turning occasionally and brushing with the reserved marinade, until cooked through and slightly charred.

  7. 7

Serve the brochettes hot, with the reserved marinade as a dipping sauce. They are often served with sweet potato fries or rice.

💡 Tip: The remaining marinade can be heated and served as a dipping sauce.

💡 Pro Tips

  • Goat meat is traditional, but beef or chicken are also common and delicious.
  • Don't overcook the meat; it should be juicy.
  • For extra flavor, marinate the meat for several hours or overnight.

🔄 Variations

  • Add other vegetables like bell pepper chunks or cherry tomatoes to the skewers.
  • Include mushrooms for an added earthy flavor.
  • For a spicier version, add more chili to the marinade.
