Rwandan Brochettes
Rwandan Brochettes, known as 'Brochettes' in French, are a popular street food and dish in Rwanda, consisting of small cubes of meat threaded onto skewers and grilled. Typically made with goat, beef, or chicken, they are often marinated in a flavorful sauce of tomatoes, onions, and chili, and served with a dipping sauce.

🧂 Ingredients
- 1 lb Goat, beef, or chicken meat(cut into 1-inch cubes)
- 1 medium Onion(quartered)
- 4 medium Fresh ripe plum tomatoes(blended)
- 0.5 medium Onion(minced)
- 2 cloves Garlic(minced)
- 3 Pili-pili chilies(or other hot chilies, to taste)
- 2 tablespoons Vegetable oil
- 1 tablespoon Tomato paste
- 1 Bouillon cube(Maggi or similar)
- Salt(to taste)
- 1 teaspoon Cumin(optional)
- 1 teaspoon Paprika(optional)
👨🍳 Instructions
- 1
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
💡 Tip: Metal skewers do not require soaking. - 2
Prepare the marinade: In a blender, combine the blended tomatoes, minced onion, minced garlic, chilies, vegetable oil, tomato paste, and bouillon cube. Blend until smooth. Season with salt, cumin, and paprika if using.
💡 Tip: Adjust chili amount based on desired heat level. - 3
Thread the meat cubes and onion quarters onto the skewers, alternating between meat and onion.
- 4
Pour about half of the marinade over the skewers, ensuring they are well coated. Let marinate for at least 30 minutes at room temperature, or longer in the refrigerator.
- 5
Preheat your grill to medium-high heat.
💡 Tip: Alternatively, you can bake the brochettes in a preheated oven at 425°F (220°C) for about 10-15 minutes. - 6
Grill the brochettes for 8-10 minutes, turning occasionally and brushing with the reserved marinade, until cooked through and slightly charred.
- 7
Serve the brochettes hot, with the reserved marinade as a dipping sauce. They are often served with sweet potato fries or rice.
💡 Tip: The remaining marinade can be heated and served as a dipping sauce.
