Samak Mashwi Jeddah - Saudi Arabia traditional dish

🧂 Ingredients

  • 2 kg Whole fish(such as sea bream or snapper, scaled and gutted)
  • 3 large Lemons(juiced, plus wedges for serving)
  • 8 cloves Garlic(minced)
  • 1/2 cup Coriander(fresh, chopped)
  • 2 tsp Cumin powder
  • 1 tsp Turmeric powder
  • 1 tsp Chili flakes(or to taste)
  • 4 tbsp Olive oil
  • to taste Salt
  • 1 tsp Black pepper(freshly ground)

👨‍🍳 Instructions

  1. 1

Make deep slashes on both sides of each fish. This helps the marinade penetrate and ensures even cooking.

💡 Tip: Ensure the slashes are deep enough to reach the bone.
  2. 2

In a bowl, combine lemon juice, minced garlic, chopped coriander, cumin powder, turmeric powder, chili flakes, olive oil, salt, and black pepper. Mix well to create the marinade.

💡 Tip: Taste the marinade and adjust seasoning as needed.
  3. 3

Rub the marinade all over the fish, making sure to get it into the slashes and the cavity. Let the fish marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator.

  4. 4

Preheat your grill to medium-high heat. If using a charcoal grill, wait until the coals are covered in white ash.

💡 Tip: Clean and oil the grill grates to prevent sticking.
  5. 5

Place the marinated fish on the preheated grill. Grill for about 8-10 minutes per side, or until the fish is cooked through and flakes easily with a fork. Cooking time will vary depending on the thickness of the fish.

  6. 6

Carefully remove the grilled fish from the grill. Serve immediately with lemon wedges on the side.

💡 Tip: Serve with a side of rice or a fresh salad.

💡 Pro Tips

  • Use fresh, high-quality fish for the best results.
  • Don't overcook the fish, as it can become dry.
  • If you don't have a grill, you can bake the fish in a preheated oven at 200°C (400°F) for 20-25 minutes.

🔄 Variations

  • Add a pinch of saffron to the marinade for a more luxurious flavor and color.
  • Stuff the fish cavity with slices of tomato, onion, and fresh herbs before grilling.
