Solomon Islands Banana Fritters with Coconut Drizzle
Sweet and simple fritters made from ripe bananas, lightly fried until golden brown, and drizzled with a sweet coconut sauce. A popular snack or dessert across the islands.

🧂 Ingredients
- 4 large Ripe bananas(mashed)
- 1 cup All-purpose flour
- 2 tbsp Sugar(plus more for drizzle)
- 1 tsp Baking powder
- 0.5 tsp Salt
- 1 large Egg
- 0.25 cup Milk(or water)
- for frying Vegetable oil
- 100 ml Coconut milk(for drizzle)
- 2 tbsp Brown sugar(for drizzle)

In a large bowl, mash the ripe bananas until mostly smooth.

Add the flour, 2 tbsp sugar, baking powder, and salt to the mashed bananas. Mix well.

In a separate small bowl, whisk the egg and milk (or water) together. Pour this into the banana mixture and stir until just combined. Do not overmix.

Heat about 1-2 inches of vegetable oil in a deep pan or pot over medium-high heat until shimmering.

Carefully drop spoonfuls of the batter into the hot oil. Fry in batches, being careful not to overcrowd the pan, for about 2-3 minutes per side, until golden brown and cooked through.

Remove fritters with a slotted spoon and place on a wire rack or paper towel-lined plate to drain excess oil.

While the fritters are frying, prepare the drizzle: In a small saucepan, combine coconut milk and brown sugar. Heat gently, stirring until the sugar dissolves and the sauce thickens slightly.
