Solomon Islands Banana Fritters with Coconut Drizzle - Solomon Islands traditional dish

🧂 Ingredients

  • 4 large Ripe bananas(mashed)
  • 1 cup All-purpose flour
  • 2 tbsp Sugar(plus more for drizzle)
  • 1 tsp Baking powder
  • 0.5 tsp Salt
  • 1 large Egg
  • 0.25 cup Milk(or water)
  • for frying Vegetable oil
  • 100 ml Coconut milk(for drizzle)
  • 2 tbsp Brown sugar(for drizzle)

👨‍🍳 Instructions

  1. 1

In a large bowl, mash the ripe bananas until mostly smooth.

  2. 2

Add the flour, 2 tbsp sugar, baking powder, and salt to the mashed bananas. Mix well.

  3. 3

In a separate small bowl, whisk the egg and milk (or water) together. Pour this into the banana mixture and stir until just combined. Do not overmix.

  4. 4

Heat about 1-2 inches of vegetable oil in a deep pan or pot over medium-high heat until shimmering.

  5. 5

Carefully drop spoonfuls of the batter into the hot oil. Fry in batches, being careful not to overcrowd the pan, for about 2-3 minutes per side, until golden brown and cooked through.

  6. 6

Remove fritters with a slotted spoon and place on a wire rack or paper towel-lined plate to drain excess oil.

  7. 7

While the fritters are frying, prepare the drizzle: In a small saucepan, combine coconut milk and brown sugar. Heat gently, stirring until the sugar dissolves and the sauce thickens slightly.

  8. 8

Drizzle the warm coconut sauce over the banana fritters before serving.

💡 Pro Tips

  • Use very ripe bananas for the best flavor and sweetness.
  • Ensure the oil is hot enough before frying to prevent the fritters from becoming greasy.
  • The coconut drizzle can be made ahead of time and gently reheated.

🔄 Variations

  • Add a pinch of cinnamon or nutmeg to the batter.
  • For a richer drizzle, add a tablespoon of butter to the coconut milk and brown sugar mixture.
  • Serve with fresh tropical fruits like mango or pineapple.
