Solomon Islands Breadfruit Fritters
Crispy on the outside and soft on the inside, these savory breadfruit fritters are a popular snack or side dish. Made with mashed ripe breadfruit, they are seasoned with local spices and fried to golden perfection.

🧂 Ingredients
- 2 medium Ripe breadfruit(peeled, cored, and boiled until tender)
- 0.5 cup All-purpose flour
- 1 large Egg
- 0.5 small Onion(finely chopped)
- 1 clove Garlic(minced)
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground)
- 3 cups Cooking oil(for frying)
- 2 tbsp Fresh chives or spring onion greens(chopped (optional))
👨🍳 Instructions
- 1
Boil the peeled, cored breadfruit until fork-tender, about 20-30 minutes. Drain well and let it cool slightly.
- 2
Mash the boiled breadfruit in a large bowl until smooth. Ensure there are no large lumps.
- 3
Add the all-purpose flour, egg, finely chopped onion, minced garlic, salt, and pepper to the mashed breadfruit. Mix well until all ingredients are combined into a thick batter.
- 4
Stir in the chopped chives or spring onion greens, if using.
- 5
Heat about 2-3 inches of cooking oil in a deep pan or pot over medium-high heat until it reaches about 350°F (175°C).
- 6
Carefully drop spoonfuls of the breadfruit batter into the hot oil. Do not overcrowd the pan; fry in batches.
- 7
Fry the fritters for 3-4 minutes per side, or until golden brown and crispy. Use a slotted spoon to turn them.
- 8
Remove the fritters from the oil and place them on a wire rack or paper towel-lined plate to drain excess oil.
- 9
Serve hot as a snack or side dish.
💡 Pro Tips
- ✓Ensure the breadfruit is ripe for a sweeter flavor and softer texture.
- ✓Do not make the batter too thin, or the fritters will not hold their shape.
- ✓Maintain a consistent oil temperature for even cooking and crispiness.
🔄 Variations
- Add a pinch of curry powder or turmeric for extra flavor and color.
- Mix in small pieces of cooked fish or shredded chicken for a more substantial fritter.
