Solomon Islands Breadfruit and Fish Curry
A comforting and aromatic curry featuring tender chunks of breadfruit and flaky white fish simmered in a rich coconut milk broth with local spices.

🧂 Ingredients
- 1 medium Breadfruit(peeled, seeded, and cut into 1.5-inch chunks)
- 400 g White fish fillets(such as snapper or cod, cut into large pieces)
- 400 ml Coconut milk(full fat)
- 1 large Onion(chopped)
- 4 cloves Garlic(minced)
- 1 inch Ginger(grated)
- 1 tsp Turmeric powder
- 1 tsp Coriander powder
- 0.5 tsp Cumin powder
- 0.5 tsp Chili flakes(or to taste)
- 2 tbsp Vegetable oil
- 1 tbsp Lime juice
- to taste Salt
- a handful Fresh cilantro(chopped, for garnish)

Boil the breadfruit chunks in water until fork-tender, about 15-20 minutes. Drain and set aside.

Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until softened, about 5-7 minutes.

Add minced garlic, grated ginger, turmeric, coriander, cumin, and chili flakes. Stir and cook for 1 minute until fragrant.

Pour in the coconut milk and bring to a gentle simmer. Season with salt.

Add the boiled breadfruit to the simmering coconut milk. Cook for 10 minutes, allowing the flavors to meld and the breadfruit to absorb some of the sauce.

Gently place the fish pieces into the curry. Cover and simmer for another 5-7 minutes, or until the fish is cooked through and flakes easily. Be careful not to overcook the fish.

Stir in the lime juice.
