Solomon Islands Breadfruit and Bean Curry

- 1 medium Breadfruit(peeled, seeded, and cubed)
- 400 g Mixed beans (e.g., kidney beans, black beans)(cooked or canned, drained and rinsed)
- 400 ml Coconut milk(full fat)
- 1 medium Onion(chopped)
- 3 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 2 tbsp Curry powder
- 1 tsp Turmeric powder
- 1 tsp Cumin seeds
- 2 tbsp Vegetable oil
- 200 ml Water(or as needed)
- to taste Salt
- a handful Fresh coriander(chopped, for garnish)

Heat vegetable oil in a large pot or Dutch oven over medium heat. Add cumin seeds and let them splutter, about 30 seconds.
