  • 400 g Mixed beans (e.g., kidney beans, black beans)(cooked or canned, drained and rinsed)
  • 400 ml Coconut milk(full fat)
  • 1 medium Onion(chopped)
  • 3 cloves Garlic(minced)
  • 1 inch piece Ginger(grated)
  • 2 tbsp Curry powder
  • 1 tsp Turmeric powder
  • 1 tsp Cumin seeds
  • 2 tbsp Vegetable oil
  • 200 ml Water(or as needed)
  • to taste Salt
  • a handful Fresh coriander(chopped, for garnish)
