Umngqusho
Xhosa Samp and Beans
A hearty and traditional Xhosa dish of samp (crushed maize kernels) and beans, slow-cooked to perfection with aromatic spices. This comforting meal is a staple in South African cuisine.

- 250g Sugar beans (dried)
- 60g Butter
- 1 large Onion
- 1 Chili pepper (e.g., bird's eye or jalapeรฑo)

Rinse the samp and sugar beans thoroughly under cold running water. Place them in a large bowl and cover with plenty of cold water. Let them soak overnight (at least 12 hours) to rehydrate and soften.

Drain the soaked samp and beans. Transfer them to a large, heavy-bottomed pot or Dutch oven. Add fresh cold water to cover the samp and beans by at least 5cm (2 inches). Bring to a boil over high heat.

Once boiling, reduce the heat to low, cover the pot tightly, and let it simmer gently for 2 hours. Stir occasionally to prevent sticking. The samp should start to soften.

After 2 hours, check the samp. If it's still very firm, add a little more hot water if needed. Stir in the chopped onion and chili pepper. Continue to simmer, covered, for another 1 hour, or until both the samp and beans are tender and creamy. The liquid should have reduced and thickened.

Stir in the butter until melted and well combined. Season generously with salt to taste. Taste and adjust seasoning if necessary.
