  • 3-4 medium Green chilies(slit lengthwise)
  • 4 cloves Garlic cloves(minced)
  • 1 inch piece Ginger(grated)
  • 1 tsp Turmeric powder
  • 2 tbsp Curry powder (Sri Lankan style)
  • 1 tsp Chili powder(adjust to taste)
  • 400 ml Thick coconut milk
  • 200 ml Thin coconut milk or water
  • 10-15 leaves Curry leaves
  • 1 tsp Mustard seeds
  • 2 tbsp Coconut oil
  • to taste Salt

    Heat coconut oil in a large pot or Dutch oven over medium heat. Add mustard seeds and curry leaves. Let the mustard seeds splutter.

    Add turmeric powder, curry powder, and chili powder. Stir well and cook for 1 minute until fragrant.
