St. Kitts Stuffed Breadfruit
A savory and satisfying dish where hollowed-out breadfruit is filled with a flavorful mixture of seasoned ground meat, vegetables, and spices, then baked until tender and golden brown.

🧂 Ingredients
- 1 medium Large breadfruit(fully ripe, not green)
- 0.75 lb Lean ground beef
- 0.75 lb Ground ham
- 1 medium Onion(finely chopped)
- 1 stalk Green onion(sliced)
- 1 medium Tomatoes(chopped)
- to taste Salt
- to taste Island Spice Jamaican Jerk Spice(or your preferred jerk seasoning)
- 2 tablespoons Butter(real)
- for parboiling Salted water
👨🍳 Instructions
- 1
Peel the breadfruit, then parboil it whole in salted water until tender (about 30-40 minutes). Remove from water and let it cool completely.
- 2
Preheat oven to 350°F (175°C). Lightly grease a baking pan.
- 3
In a skillet, lightly fry the chopped onion, green onion, and tomato in butter until softened. Add the ground beef and ham, and cook until the meat is almost done. Season with salt and your chosen jerk spice.
- 4
Once the breadfruit is cool, cut out the core from the stalk end. Scoop out enough of the pulp to create a cavity for the stuffing, being careful not to pierce the skin.
- 5
Fill the cavity of the breadfruit with the meat mixture.
- 6
Place the stuffed breadfruit in the prepared baking pan. Bake for about 50 minutes, or until the breadfruit is soft and has a nice golden-brown color. Add a little water to the pan if it appears dry during baking.
💡 Pro Tips
- ✓Ensure the breadfruit is fully ripe for the best texture and flavor.
- ✓If jerk seasoning is not available, a blend of allspice, thyme, garlic powder, onion powder, and a pinch of cayenne pepper can be used.
- ✓For a vegetarian option, substitute the meat with a mixture of sautéed vegetables like mushrooms, bell peppers, zucchini, and black beans, seasoned with jerk spice.
🔄 Variations
- Add a layer of cheese on top of the meat filling before baking.
- Incorporate finely chopped cooked plantains into the meat mixture for added sweetness.
- Serve with a side of hot sauce or a cooling yogurt-based dip.
