  • 4 tbsp Extra-virgin olive oil

  • 2 tbsp Capers(drained)
  • 0.25 cup Fresh parsley(chopped)
  • to taste Salt
  • to taste Black pepper
  • 1 Bay leaf

👨‍🍳 Instructions

  1. 1

Prepare the cod: Soak the dried salted cod in cold water for 24-48 hours, changing the water several times to remove excess salt. Drain and pat dry. Cut into bite-sized pieces.

💡 Tip: Soaking is crucial to remove saltiness. If the cod is still too salty after soaking, you can briefly boil it in fresh water.
  2. 2

Heat 2 tablespoons of olive oil in a large skillet or Dutch oven over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.

  3. 3

Add the minced garlic and cook for another minute until fragrant.

  4. 4

Stir in the crushed tomatoes and white wine. Add the bay leaf. Bring to a simmer and cook for 5-10 minutes to allow the flavors to meld.

  5. 5

Add the cod pieces to the skillet. Stir gently to coat with the sauce. Reduce heat to low, cover, and simmer for about 20-30 minutes, or until the cod is tender and flakes easily.

  6. 6

Stir in the sliced black olives, capers, and chopped fresh parsley. Cook for another 5 minutes.

  7. 7

Season with salt and black pepper to taste. Remove the bay leaf before serving. Serve hot.

💡 Tip: Taste and adjust seasoning carefully, as the cod may retain some saltiness.

💡 Pro Tips

  • Serve with crusty bread for dipping into the sauce, or with boiled potatoes.
  • Some recipes include a splash of brandy or a pinch of red chili for extra flavor.
  • Ensure the cod is thoroughly rehydrated to avoid a tough texture.

🔄 Variations

  • Add a pinch of red pepper flakes for a touch of heat.
  • Include other Mediterranean vegetables like bell peppers.
  • Some versions use fresh cod instead of dried, adjusting cooking time accordingly.
