Surinamese Long Beans with Salted Beef (Kousenband met Zoutvlees)

- 250 g Salted beef (zoutvlees)
- 500 g Long beans (kousenband)(trimmed and cut into 5cm pieces)
- 1 medium Onion(chopped)
- 3 cloves Garlic(minced)
- 1 small Scotch bonnet pepper(seeded and minced (optional, for heat))
- 2 medium Tomatoes(chopped)
- 2 tbsp Vegetable oil
- 1 cup Water(or as needed)

Rinse the salted beef thoroughly under cold water. Place it in a bowl and cover with fresh cold water. Let it soak for at least 12 hours, changing the water several times, or boil it in fresh water for 30 minutes to remove excess salt. Drain and cut into bite-sized pieces.

Heat vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.

Add the minced garlic and scotch bonnet pepper (if using) and cook for another minute until fragrant.

Add the prepared salted beef pieces to the pot and brown them slightly, about 5-7 minutes.
