  • 100 g Carrots(julienned)
  • 1 medium Onion(thinly sliced)
  • 3 cloves Garlic(minced)

  • 1 tbsp Oyster sauce
  • 1 tsp Sesame oil
  • 3 tbsp Vegetable oil(for stir-frying)
  • to taste Salt
  • to taste Pepper
  • 2 stalks Spring onions(chopped, for garnish)

👨‍🍳 Instructions

  1. 1

Cook egg noodles according to package directions until al dente. Drain and rinse with cold water to prevent sticking. Toss with a little sesame oil.

  2. 2

Heat 1 tbsp of vegetable oil in a wok or large skillet over medium-high heat. Stir-fry chicken pieces until cooked through. Remove from wok and set aside.

  3. 3

Add another 1 tbsp of vegetable oil to the wok. Add shrimp (if using) and stir-fry until pink and cooked. Remove and set aside with the chicken.

  4. 4

Add the remaining 1 tbsp of vegetable oil to the wok. Add sliced onion and minced garlic, stir-fry until fragrant.

  5. 5

Add shredded cabbage and julienned carrots. Stir-fry for 3-5 minutes until vegetables are tender-crisp.

  6. 6

Return the cooked chicken and shrimp to the wok. Add the cooked noodles.

  7. 7

In a small bowl, whisk together soy sauce, kecap manis, oyster sauce, and sesame oil. Pour the sauce over the noodles and ingredients in the wok.

  8. 8

Toss everything together well, ensuring the noodles and vegetables are evenly coated with the sauce. Stir-fry for another 2-3 minutes until heated through.

  9. 9

Season with salt and pepper to taste. Garnish with chopped spring onions before serving.

💡 Pro Tips

  • Using day-old noodles can prevent them from becoming mushy.
  • Ensure your wok or skillet is hot before adding ingredients for proper stir-frying.
  • Adjust the amount of kecap manis to control the sweetness.
  • Feel free to add other vegetables like bell peppers, snow peas, or bok choy.

🔄 Variations

  • Use beef or pork instead of chicken.
  • Add a fried egg on top of each serving.
  • For a spicier version, add some chili flakes or sambal oelek to the sauce.
