Svepask
Svepask is a traditional Swedish layered dish, often prepared for special occasions. It typically features layers of thinly sliced potatoes, onions, and sometimes meat or fish, baked in a creamy sauce. - 1 kg Potatoes(peeled and thinly sliced)
- 3 large Yellow onions(thinly sliced)
- 50 g Butter
- 400 ml Heavy cream
- 200 ml Milk
- 2 large Egg yolks
- 1.5 tsp Salt
- 0.5 tsp White pepper
- 0.25 tsp Nutmeg(freshly grated)
- 2 tbsp Fresh dill(chopped, for garnish)

Preheat your oven to 175°C (350°F). Grease a large baking dish with butter.

In a large pan, melt the butter over medium heat. Add the sliced onions and cook slowly until softened and lightly golden, about 10-15 minutes. Do not brown them too much.

In a separate bowl, whisk together the heavy cream, milk, egg yolks, salt, white pepper, and nutmeg.

Arrange a layer of thinly sliced potatoes in the prepared baking dish. Top with a layer of the softened onions. Repeat the layers until all potatoes and onions are used, ending with a layer of potatoes.

Pour the cream mixture evenly over the layers in the baking dish.

Cover the baking dish tightly with aluminum foil. Bake for 45 minutes.

Remove the foil and continue baking for another 15-20 minutes, or until the potatoes are tender and the top is golden brown and bubbling.
