Tilapia in Groundnut Stew
A rich and savory stew made with ground peanuts, tomatoes, and spices, often served with pan-fried tilapia. This is a variation on the popular groundnut soup.

- 4 medium Tilapia fillets(about 6 oz each)
- 1 cup Natural peanut butter(unsweetened, smooth)
- 400 g Tomatoes(canned crushed or fresh ripe)
- 1 large Onion(chopped)
- 1 medium Red bell pepper(chopped)
- 1 Scotch bonnet pepper(or to taste, finely chopped)
- 3 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 2 tbsp Tomato paste
- 3 tbsp Vegetable oil
- 4 cups Chicken or vegetable broth
- 1 tsp Curry powder
- 1/2 tsp Thyme(dried)

- 1 tbsp Lemon juice

Season tilapia fillets with salt, black pepper, and lemon juice. Set aside.

In a bowl, whisk the peanut butter with 1 cup of the broth until smooth. Set aside.

In a large pot or Dutch oven, heat vegetable oil over medium heat. Add chopped onion and sauté until softened, about 5 minutes.
