- 1 inch Galangal(sliced)
- 1 stalk Lemongrass(bruised)
- 2 Turmeric leaves(optional, torn)
- 2 medium Tomatoes(cut into wedges)
- 150 g Okra(trimmed)
- 150 g Long beans(cut into 2-inch lengths)
- 500 ml Water
- to taste Salt
- 1 tsp Sugar(optional, to balance sourness)
- for garnish Cilantro(chopped)

Heat vegetable oil in a pot or wok over medium heat. Sautรฉ shallots, garlic, chilies, galangal, and lemongrass until fragrant, about 3-5 minutes.
