Ugandan Groundnut Stew with Sweet Potatoes and Greens

- 2 cups Roasted groundnuts (peanuts)(ground into a paste or use smooth peanut butter)
- 2 tbsp Vegetable oil
- 2 medium Onions(chopped)
- 4 cloves Garlic(minced)
- 1 inch knob Ginger(grated)
- 3 medium Tomatoes(chopped)
- 1 tbsp Tomato paste
- 2 medium Sweet potatoes(peeled and cubed)
- 1 bunch Mixed greens(such as spinach, kale, or collard greens, washed and chopped)
- 6 cups Water
- 1 tsp Salt(to taste)
- 0.5 tsp Black pepper(freshly ground, to taste)
- 1 tsp Curry powder
- 0.5 tsp Cumin

Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onions and sauté until softened and translucent, about 5-7 minutes.

Add minced garlic and grated ginger to the pot and cook for another minute until fragrant.

Stir in the chopped tomatoes and tomato paste. Cook, stirring occasionally, until the tomatoes break down and the mixture thickens, about 5-7 minutes.
