🧂 Ingredients

  • 1 kg Pumpkin(peeled, deseeded, and cubed)
  • 200 g Roasted groundnuts (peanuts)(or smooth peanut butter)
  • 2 medium Onion(chopped)
  • 400 g Tomatoes(ripe, chopped)
  • 1-2 Scotch bonnet chili pepper(finely chopped, seeds removed for less heat)
  • 3 cloves Garlic(minced)
  • 1 inch piece Ginger(freshly grated)
  • 2 tbsp Vegetable oil
  • 500 ml Water or vegetable broth
  • to taste Salt
  • to taste Black pepper
  • 1 tsp Curry powder(optional)

    If using whole roasted groundnuts, pound them into a fine pulp with a little water. If using peanut butter, skip this step.

    Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onions and sauté until softened and translucent, about 5-7 minutes.
