A fragrant and flavorful rice dish from Madagascar, where steamed rice is served with a vibrant sauce infused with lemongrass, ginger, garlic, and a hint of chili. It's a simple yet aromatic accompaniment to various main courses.

🧂 Ingredients
- 2 cups Jasmine rice
- 3 cups Water
- 3 large Lemongrass stalks(tough outer layers removed, finely chopped)
- 1 inch piece Ginger(peeled and minced)
- 4 cloves Garlic cloves(minced)
- 2 tbsp Vegetable oil
- 1 tsp Turmeric powder
- 0.5 tsp Red chili flakes(or to taste)
- 1 tsp Salt(or to taste)
- 1 tbsp Lime juice
- 2 tbsp Fresh cilantro(chopped, for garnish)
👨🍳 Instructions
- 1
Rinse the jasmine rice thoroughly under cold water until the water runs clear. Drain well.
- 2
In a medium saucepan, combine the rinsed rice and 3 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the water is absorbed and the rice is tender.
- 3
While the rice is cooking, prepare the sauce. Heat the vegetable oil in a small skillet over medium heat. Add the chopped lemongrass, minced ginger, and minced garlic. Sauté for 3-5 minutes until fragrant, being careful not to burn the garlic.
- 4
Stir in the turmeric powder and red chili flakes. Cook for another minute until the spices are fragrant.
- 5
Add about 1/2 cup of water to the skillet, along with the salt. Bring to a simmer and cook for 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- 6
Stir in the lime juice. Taste and adjust seasoning if needed.
- 7
Once the rice is cooked, fluff it with a fork. Serve the steamed rice topped with the lemongrass sauce. Garnish with fresh cilantro.
