- 4 medium Tomatoes(chopped)

- 3 tbsp Vegetable oil
- 300 ml Water or fish broth
- 1 tbsp Coriander(fresh, chopped)
- 1 optional Chili pepper(finely chopped, for heat)

Score the sides of the fish with a knife. Season generously with salt and pepper, and rub with a little oil. Set aside.

Prepare the peanut sauce: Heat 2 tbsp of vegetable oil in a saucepan over medium heat. Add chopped onion and sauté until softened, about 5 minutes.

Add minced garlic and chopped tomatoes to the saucepan. Cook for another 5-7 minutes until tomatoes break down.

Stir in the peanut butter until well combined with the tomato mixture. Gradually add the water or fish broth, stirring continuously to create a smooth sauce. Bring to a simmer.

Add chopped coriander and optional chili pepper. Season with salt and pepper to taste. Let the sauce simmer gently for 10-15 minutes, stirring occasionally, until thickened. If too thick, add a little more water.
