Sopa de Res Hondureña
A hearty and flavorful beef soup, considered a national comfort food in Honduras. It's rich with tender chunks of beef, a variety of vegetables, and aromatic herbs, making it a complete and satisfying meal.

- 2 lbs Beef shank or chuck roast(cut into 2-inch pieces)
- 12 cups Water
- 4 ears Corn on the cob(cut into 2-inch pieces)
- 1 lb Yuca(peeled and cut into 2-inch pieces)
- 4 medium Potatoes(peeled and quartered)
- 3 medium Carrots(peeled and sliced)
- 1 cup Green beans(trimmed and cut into 2-inch pieces)
- 1/2 medium head Cabbage(cut into wedges)
- 1 large Onion(quartered)
- 4 cloves Garlic(smashed)
- 1 bunch Cilantro(stems and leaves separated)
- to taste Salt
- to taste Black pepper
- 2 tbsp Vegetable oil

In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Sear the beef pieces on all sides until browned. Remove beef and set aside.

Add the quartered onion and smashed garlic to the pot. Sauté for 2-3 minutes until fragrant.

Return the beef to the pot. Add 10 cups of water, the cilantro stems, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 1.5 to 2 hours, or until the beef is tender.

Add the corn, yuca, and potatoes to the pot. Add more water if needed to cover the ingredients. Bring back to a boil, then reduce heat and simmer for 20-30 minutes, or until yuca and potatoes are tender.

Add the carrots and green beans. Cook for another 10 minutes.

Add the cabbage and cook for 5-10 minutes more, until tender-crisp.
