- 3 tbsp Olive oil
- 1 large Yellow onion(chopped)
- 3 cloves Garlic(minced)
- 2 medium Bell peppers(mixed colors, chopped)
- 400 g Crushed tomatoes
- 500 ml Vegetable broth
- 1 tsp Dried oregano
- 1 tsp Dried basil
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(or to taste)
- 2 tbsp Fresh parsley(chopped, for garnish)

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sautรฉ until softened, about 5-7 minutes.
