Antiguan Dukuna
Dukuna is a traditional Antiguan and Barbudan steamed bread made from grated green bananas, flour, and coconut milk. It's often served as a side dish with savory stews and fish.

- 4 medium Green bananas(peeled and finely grated)
- 1 cup All-purpose flour
- 0.5 cup Coconut milk(full fat)
- 2 tablespoons Sugar
- 0.5 teaspoon Salt
- 1 teaspoon Baking powder
- 2 tablespoons Butter or margarine(melted)
- 1 tablespoon Butter or margarine(for greasing)

In a large bowl, combine the grated green bananas, flour, coconut milk, sugar, salt, and baking powder. Mix well until a thick batter forms.

Stir in the melted butter or margarine until fully incorporated.

Grease a heatproof dish or individual ramekins with butter or margarine.

Spoon the batter into the prepared dish(es), filling them about two-thirds full.

Prepare a steamer by bringing water to a boil in a pot. Place the dish(es) in the steamer, cover tightly, and steam for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Let cool slightly before serving. Dukuna can be served warm or at room temperature.
