  • 2 lbs Chicken wings(cut into pieces)
  • 3 large Limes(juiced)
  • 1 medium Onion(chopped)
  • 3 medium Potatoes(peeled and cubed)
  • 2 medium Carrots(peeled and sliced)
  • 2 large Celery stalks(chopped)
  • 1 tsp Garlic powder
  • 2 tbsp Allspice
  • 2 tsp Salt(or to taste)
  • 1 tsp Black pepper(or to taste)
  • 7 cups Water
  • 2 tbsp Butter
  • 1 whole Scotch bonnet pepper(optional, for heat)

    Rinse chicken wings and place in a large pot. Add lime juice and salt. Cover with fresh water and bring to a boil for 8 minutes. Drain and rinse the chicken.
