Belarusian Pumpkin and Mushroom Soup
Garbuzok
A creamy and flavorful soup made with roasted pumpkin, earthy mushrooms, and aromatic vegetables. Garbuzok is a traditional Belarusian dish that offers a delightful balance of sweet and savory notes, perfect for a light yet satisfying meal.

- 1 kg Pumpkin, peeled, seeded, and cubed

- 1 Large onion, chopped
- 2 medium Carrots, peeled and chopped
- 2 Celery stalks, chopped
- 3 cloves Garlic, minced
- 250 g Fresh mushrooms, sliced
- 1.2 l Vegetable broth
- 100 ml Heavy cream
- 1/4 tsp Nutmeg, freshly grated

Preheat oven to 200ยฐC (400ยฐF). Toss the cubed pumpkin with 1 tbsp of olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes, or until tender and lightly caramelized.

While the pumpkin is roasting, heat the remaining 1 tbsp of olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook until softened, about 8-10 minutes.
