Pique a lo Macho
A hearty and flavorful Bolivian dish originating from Cochabamba, typically featuring a generous mix of grilled meats, sausages, french fries, onions, tomatoes, and a spicy rocoto pepper sauce.

- 500 g Beef steak(cut into bite-sized pieces)
- 300 g Pork sausage(sliced)
- 300 g Chicken breast(cut into bite-sized pieces)
- 1 kg Potatoes(cut into fries)
- 2 large Onions(sliced)
- 3 medium Tomatoes(diced)
- 2 medium Rocoto peppers(finely chopped, seeds removed for less heat)
- 4 cloves Garlic(minced)
- 1/2 cup Vegetable oil
- to taste Salt
- to taste Black pepper
- 1 tsp Cumin
- 1/4 cup Parsley(chopped, for garnish)
- 2 optional, for garnish Hard-boiled eggs

Fry the potato fries until golden brown and set aside. Keep warm.

In a large skillet or wok, heat 1/4 cup of vegetable oil over medium-high heat. Add the sliced pork sausages and cook until browned. Remove from skillet and set aside.

Add the remaining 1/4 cup of oil to the skillet. Add the beef steak and chicken pieces, seasoned with salt, pepper, and cumin. Stir-fry until cooked through and lightly browned.

Add the minced garlic and chopped rocoto peppers to the skillet. Cook for 1-2 minutes until fragrant.

Add the sliced onions and diced tomatoes to the skillet. Cook until the onions are softened and the tomatoes have broken down slightly, forming a sauce.

Return the cooked sausages to the skillet. Stir everything together to combine.

To serve, arrange a generous portion of the fried potatoes on a large platter. Top with the meat and vegetable mixture. Garnish with chopped parsley and sliced hard-boiled eggs, if using.
