Botswana Chicken and Sweet Potato Mash
A comforting and flavorful dish featuring tender chicken cooked in a savory broth, served alongside a smooth and slightly sweet mashed sweet potato.

- 1 kg Chicken pieces(bone-in, skin-on)
- 1 kg Sweet potatoes(peeled and cubed)
- 1 large Onion(chopped)
- 3 cloves Garlic(minced)
- 1 tbsp Ginger(grated)
- 400 g Tomatoes(canned, chopped)
- 500 ml Chicken broth
- 2 tbsp Peanut butter(smooth)
- 1 tbsp Curry powder
- 1 tsp Turmeric
- to taste Salt
- to taste Black pepper
- 2 tbsp Vegetable oil
- 50 g Butter(for mashing)
- 100 ml Milk(for mashing, or as needed)

Season chicken pieces with salt and pepper.

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown chicken pieces on all sides. Remove chicken and set aside.

Add chopped onion to the pot and sautรฉ until softened, about 5 minutes.

Stir in minced garlic and grated ginger, and cook for 1 minute until fragrant.

Add curry powder and turmeric, and cook for another minute, stirring constantly.

Pour in the chopped tomatoes and chicken broth. Bring to a simmer, scraping up any browned bits from the bottom of the pot.

Stir in the peanut butter until well combined.

Return the chicken pieces to the pot. Cover and simmer for 30 minutes, or until chicken is cooked through.

While the chicken is simmering, place the cubed sweet potatoes in a separate pot, cover with water, and bring to a boil. Cook until tender, about 15-20 minutes.

Drain the sweet potatoes and return them to the pot. Add butter and milk. Mash until smooth, adding more milk if needed to reach desired consistency. Season with salt and pepper.
