🧂 Ingredients
- 600 g Lamb or mutton(cubed into 1-inch pieces)
- 1 large Onion(cut into chunks for skewers)
- 1 medium Bell pepper(cut into chunks for skewers (any color))
- Marinade:
- 150 ml Yogurt(plain)
- 3 cloves Garlic(minced)
- 1 tsp Ginger(grated)
- 1 tsp Cumin powder
- 1 tsp Coriander powder
- 0.5 tsp Turmeric powder
- 1 tsp Salt
- 0.5 tsp Black pepper
- Sauce Pimentée:
- 1 small Scotch bonnet or habanero pepper(finely chopped (seeds removed for less heat))
- 2 medium Tomatoes(diced)
- 0.5 small Red onion(finely chopped)
- 2 tbsp Cilantro(chopped)
- 1 tbsp Lime juice
- 1 tbsp Vegetable oil
👨‍🍳 Instructions
- 1
In a bowl, combine all marinade ingredients: yogurt, minced garlic, grated ginger, cumin, coriander, turmeric, salt, and black pepper. Add the cubed lamb and toss to coat evenly.
- 2
Cover the bowl and refrigerate for at least 30 minutes, or preferably 1-2 hours, to allow the flavors to meld.
- 3
While the lamb marinates, prepare the sauce pimentée. In a small bowl, combine the finely chopped chili pepper, diced tomatoes, finely chopped red onion, chopped cilantro, lime juice, and vegetable oil. Mix well and set aside.
- 4
Preheat your grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- 5
Thread the marinated lamb cubes onto the skewers, alternating with chunks of onion and bell pepper.
- 6
Grill the skewers for 8-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness and has nice char marks.
- 7
Remove the brochettes from the grill and let them rest for a few minutes.
- 8
Serve the brochettes hot with the prepared sauce pimentée on the side for dipping.
