🧂 Ingredients

  • 600 g Lamb or mutton(cubed into 1-inch pieces)
  • 1 large Onion(cut into chunks for skewers)
  • 1 medium Bell pepper(cut into chunks for skewers (any color))
  • Marinade:
  • 150 ml Yogurt(plain)
  • 3 cloves Garlic(minced)
  • 1 tsp Ginger(grated)
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • 0.5 tsp Turmeric powder
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • Sauce PimentĂ©e:
  • 1 small Scotch bonnet or habanero pepper(finely chopped (seeds removed for less heat))
  • 2 medium Tomatoes(diced)
  • 0.5 small Red onion(finely chopped)
  • 2 tbsp Cilantro(chopped)
  • 1 tbsp Lime juice
  • 1 tbsp Vegetable oil

👨‍🍳 Instructions

  1. 1

In a bowl, combine all marinade ingredients: yogurt, minced garlic, grated ginger, cumin, coriander, turmeric, salt, and black pepper. Add the cubed lamb and toss to coat evenly.

  2. 2

Cover the bowl and refrigerate for at least 30 minutes, or preferably 1-2 hours, to allow the flavors to meld.

  3. 3

While the lamb marinates, prepare the sauce pimentée. In a small bowl, combine the finely chopped chili pepper, diced tomatoes, finely chopped red onion, chopped cilantro, lime juice, and vegetable oil. Mix well and set aside.

  4. 4

Preheat your grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

  5. 5

Thread the marinated lamb cubes onto the skewers, alternating with chunks of onion and bell pepper.

  6. 6

Grill the skewers for 8-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness and has nice char marks.

  7. 7

Remove the brochettes from the grill and let them rest for a few minutes.

  8. 8

Serve the brochettes hot with the prepared sauce pimentée on the side for dipping.

đź’ˇ Pro Tips

  • âś“Adjust the amount of chili pepper in the sauce to control the spice level.
  • âś“For extra tender meat, you can marinate the lamb overnight.
  • âś“Ensure the grill is hot before placing the skewers to get a good sear.
  • âś“If you don't have lamb or mutton, beef can be substituted.

🔄 Variations

  • Add cubes of pineapple or zucchini to the skewers.
  • For a smoky flavor, add a pinch of smoked paprika to the marinade.
  • Serve with a side of grilled plantains or a simple green salad.
